December Recipes – Oatmeal Cookies

One of the problems I have had with oatmeal cookies is they tend to come out of the oven (and really into the oven) quite dry. I’ve played with various recipes and none had worked out to be the type of chewy deliciousness I enjoy in a cookie.

Fortunately I have a wonderful friend whose recipes I recommend before even trying them, but I thought it would be a good idea to at least try this one before posting it on a public forum as this. I’m glad I did.


Oatmeal Cookies

1 cup (250mL) sugar
1/2 cup (125mL) melted butter
1 cup (250mL) oats
3/4 cup (180mL) flour
2 tsp (10mL) cinnamon
1 egg
1 tsp (5 mL) baking powder
1 tsp (5mL) vanilla

Mix all ingredients and form into balls. Flatten balls on a well greased cookie sheet, bake at 375F/190C for 15 minutes.

*Optional* I put in a couple of handfuls of raisins in my cookies since I think oatmeal and raisins are a marriage made in heaven. I’m sure nuts, chocolate chips, etc will add just fine with these.
