A tasty any time cookie that takes care of those last couple of tablespoons of jam you have hanging about in your refrigerator. I got this one off the interwebs somewhere, unfortunately I have no idea where.
1/2 cup butter, softened
1/3 cup sugar
1 egg yolk
1/3 tsp vanilla
1 plus 1/3 cup flour
2-3 tbsp fruit jam
Preheat oven to 375F. In a medium size bowl, cream butter and sugar until light and fluffy. Mix in egg and vanilla. Add sifted flour to creamed mixture a little bit at a time and mix well until a soft dough forms. If the mixture is too soft to handle, cover and refrigerate for about an hour.
Cover a baking sheet with parchment paper. Roll dough into 1″ balls and place on baking sheet 1-1/2″ apart. Make a well in the center of each cookie, using your finger or an instrument of similar size (I use the top of a wooden spoon). Fill the hole with jam.
Bake for 8-10 minutes or until cookies are golden brown on the bottom.
